Today we will create a salad from an avocado, and combine it with delicate leaves of Chinese cabbage with pine nuts.
The dish simultaneously refreshes thanks to Peking cabbage, gives tenderness due to avocado and satiety - to nuts. A simple yet effective dressing with olive oil and lemon juice will add the finishing touch to this culinary masterpiece. You can use any type of nuts in the recipe, because any of them give the salad an interesting taste. Ingredients:
- Chinese cabbage - 4 leaves
- Pine nuts - 30 g
- Olive oil - for dressing
- Avocado - 1 pc.
- Lemon - 1 tablespoon lemon juice
- Salt - a pinch
Step-by-step preparation of avocado and Chinese cabbage salad with pine nuts, recipe with photo:
1. Remove the required amount of leaves from Chinese cabbage, wash, dry with a paper towel and chop into thin strips. Do not wash the entire head of cabbage if you are not going to use it right away. after a while it will wither, and the leaves will lose their crispness.
2. Wash the avocado, dry it and use a sharp knife to cut the fruit in a circle, bringing the knife to the bone. Take the halves of the fruit in two hands and scroll in opposite directions to separate them. Use a spoon to gently pry the bone and remove it from the pulp.
3. Cut the avocado pulp directly into the peel into medium-sized cubes and use a spoon to pry it near the peel and remove.
4. In a deep salad bowl, fold the Chinese cabbage and avocado. Sprinkle the food with lemon juice and season with salt. Lemon juice will help prevent browning of the avocado. this fruit, like an apple, darkens on contact with air.
5. Toss the cabbage with the avocado.
