- Servings - 2-3 depending on the baking form
- Cooking time - 30-40 minutes
Ingredients:
- Milk - 150 ml
- Instant coffee - 1 tablespoon
- Rye flour - 100 g
- Eggs - 2 pcs.
- Sugar - 2 tablespoons or to taste
Step-by-step preparation of pudding with milk and rye flour:
1. Pour milk into a saucepan, add sugar and instant coffee. Use cocoa powder instead of coffee if making a dessert for children.
2. Boil the milk to dissolve the sugar and coffee. Cool liquid to room temperature or completely cold temperature. I recommend preparing milk in advance, for example in the evening. Then save time on the dessert itself.
3. Pour the yolks into a bowl and add flour. Place the squirrels in a clean, dry container and set aside.
4. Using a mixer, beat the yolks with flour until smooth and pour in the coffee milk. Stir again until smooth. The consistency of the mass will be quite liquid.
5. Beat the whites with a mixer at high speed until airy foam and stable peaks are formed. Transfer them to a bowl of dough. Stir it gently so that the proteins are evenly distributed throughout the mass. Do it in one direction and in slow movements. Otherwise, the proteins will settle and lose their airiness.
6. Find a convenient baking dish. This can be a portioned cocotte maker, pots, muffin tins, or one large muffin pan. Place the dough in them and send the product to bake in a heated oven to 180 degrees for 20 minutes. The pudding can be served both warm and chilled.
