- Flour - 200 g
- Carrots - 180 g
- Eggs - 2 pcs.
- Ground ginger powder - 1 tsp
- Sugar - 160 g or to taste
- Soda - 1 tsp
- Walnuts - 50 g
- Vegetable oil - 150 ml
Step-by-step preparation of Christmas carrot and ginger cake with walnuts, recipe with photo:
1. Peel the carrots, wash and grate on a coarse grater.
2. Lightly dry the walnuts in a clean and dry frying pan and grind into smaller pieces. Instead of walnuts, you can use almonds, hazelnuts, cashews, peanuts, pistachios …
3. Combine carrot shavings with chopped nuts and ginger powder in a bowl. You can add any other aromatic spices to this mass: cardamom, cinnamon, almond flour, citrus zest.
4. Stir the food well and set the bowl aside.
5. Wash the eggs and pour the contents into a bowl.
6. Beat eggs a little and add sugar. Continue whisking them until fluffy and double in volume.
7. Pour vegetable oil into the egg mass and beat the products with a mixer until smooth.
8. Pour flour into the liquid base and sift through a fine sieve. The flour will be enriched with oxygen and the baked goods will be more tender.
9. Add baking soda to the dough and mix well again.
10. Combine the dough with the carrot shavings.
11. Take a mixer with whisk attachments and stir the dough until smooth, so that it is evenly distributed.
12. Place the dough in a baking dish and flatten it evenly.
13. Send the cake to a preheated oven to 180 degrees and bake for 40 minutes until tender and golden brown. If you are afraid that the cake will not be baked, then check the readiness by piercing a wooden stick, it must be clean without sticking.
