An easy-to-prepare canned salad for the winter of tomatoes, bell peppers, onions and carrots.
The salad is sweet and sour due to the addition of vinegar and sugar. You can put such a salad on the festive table. The preparation for the winter comes out juicy and goes very well with the second courses: from potatoes (of any preparation), rice or buckwheat.

Ingredients:
- Bulgarian pepper - 1 kg (large and red)
- Tomatoes - 2 kg
- Carrots - 2 kg
- Onions - 2 kg
- Vegetable oil - 1 glass
- Sugar - 1 glass
- Vinegar - 0.5 cups
- Salt - 3 tablespoons full, but not rounded
- Freshly ground black pepper
Cooking winter and juicy salad with peppers and tomatoes
- Bulgarian pepper - wash, peel and cut into small cubes or slices (but not long). Put in a basin where you will cook everything. You can put it in a saucepan or a bucket, if it all fits there, but a basin is better, so everything will be extinguished better and faster.
- Tomatoes - wash, remove "butts" and cut into slices and then you can again halve them. You do not need to chop the tomatoes very much. Put them to the pepper.
- Carrots - wash, peel. Grate on a coarse grater and pour into a bowl.
- Onions - cut into four parts and then chop into quarters into slices (you can chop into cubes). Attach it to the rest of the vegetables.
- Add a glass of vegetable oil, salt, sugar, a little black pepper to a bowl with chopped vegetables, mix and bring to a boil. Simmer for about 40 minutes, sometimes an hour is needed until everything is well extinguished.
- Add half a glass of vinegar to the finished vegetables and mix everything.
- Pack everything hot in sterilized cans (it is better to use half-liter) and roll up the lids (also sterilize). Turn the jars upside down and cover with a blanket, so let them stand for a day and then you can take them to the basement or to the balcony, who stores canned food where.
The amount of vegetables can then be different, for example, more pepper and less carrots. "Shoot" sugar and salt to taste.
You can put two glasses of boiled rice in ready-made vegetables and mix, it will also turn out very tasty.
The finished salad can be chopped in a blender and used as a sauce for spaghetti or pasta.
