Traditional strudel is prepared with apple filling, but now you can find this pastry with other equally tasty fillings. For example, with peaches, plums, apricots, strawberries, pears, etc. In this recipe we will bake strudel with apple and pear filling. The aroma of baked goods is unobtrusive, but brighter, and the taste is neutral, but richer. Fruits bake well, become tender and soft. Everyone can cook strudel, because the whole procedure is simplified. This pastry is very relevant in the summer, when there is fresh fruit and they can be combined in different variations. In the preparation of this delicacy, there are some secrets that will help make strudel tastier or simplify the work to a minimum.
- If you want to bake dessert faster, use only pears, as they are softer in structure, from which they bake faster.
- Before baking, grease the surface of the strudel with butter, then you get a velvety and soft flour layer.
- To give the baked goods a glossy shine, rich color and golden brown crust, grease them before baking with a traditional lleison made from a mixture of egg yolk and milk or milk cream.
- To make the dough more tender, add a few tablespoons of cottage cheese to the recipe.
- Don't have time to knead the dough? Use thin Armenian pita bread or commercial ready-made filo dough. You can also use store-bought puff pastry.

Ingredients:
- Wheat flour - 1, 5 tbsp.
- Ground cinnamon - 1 tablespoon
- Vegetable oil - 40 ml
- Salt - a pinch
- Apples - 3 pcs.
- Drinking water - 100 ml
- Raisins - 100 g
- Butter - 30 g
- Sugar - 100 g or to taste
- Pears - 3 pcs.
Step-by-step preparation of strudel with pears and apples, recipe with photo:
1. Pour drinking water and vegetable oil into the bowl of a food processor, add flour and a pinch of salt, and add room temperature butter.
2. Knead an elastic dough so that it does not stick to the sides of the dishes and hands. If you don't have a food processor, knead the dough with your hands.
3. Roll out the dough with a rolling pin as thin as possible.
4. Take the dough in your hands and stretch it with the back of your palms. The strudel dough should be as thin as possible. The thinner, the tastier the dessert. An ideal dough if you can read the written text on the newspaper through it.
5. Place the finished dough on the countertop.
6. Wash, dry and core the pears and apples. Grate the fruit on a coarse grater and put the shavings on the dough.
7. Sprinkle the dough with sugar, cinnamon powder and add raisins. Wash it and dry it with a paper towel. If it is hard, steam the bay with boiling water for 5 minutes.
8. Roll the dough into a roll.
9. Place the roll on a baking tray oiled with vegetable oil. Brush the roll with butter, milk or yolk to make it golden brown.
10. Send the strudel with pears and apples to a preheated oven to 180 degrees for half an hour. Serve the finished dessert warm or chilled. Serve the finished strudel deliciously with vanilla syrup, ice cream scoops or berries.
