Oatmeal cookies can rightfully be called one of the most delicious. It is also much healthier than wheat-based baked goods. The recipe that we suggest you try will double your liking, as we will cook oatmeal cookies with the addition of pumpkin puree. This will not only saturate the color of the dessert, but also give it the subtle scent of a seasonal vegetable.

Ingredients:
- Pumpkin - 200 g
- Oat flakes - 100 g
- Sugar - 50-70 g
- Flour - 200-220 g
- Vegetable oil - 100 ml
- Soda - 0.5 tsp
- Salt - on the tip of a knife
- Vinegar or lemon juice - 1 tsp
Step by step for making oatmeal cookies with pumpkin puree
1. Fry the oatmeal for this recipe until tender golden brown in a dry skillet.
2. Put pieces of peeled pumpkin in a saucepan and fill with water. There should not be too much water: it should literally cover the pumpkin. We put the pumpkin on fire and boil until soft.
3. Meanwhile, the oatmeal has cooled down. Pour them into a blender bowl and grind them into very fine crumbs. You can also use a coffee grinder or meat grinder to grind the cereal.
4. The pumpkin is boiled. Drain off excess water and puree the pumpkin with a hand blender. Combine mashed potatoes with oat flour and vegetable oil.
5. Add sugar and a pinch of salt. You can diversify this recipe as you wish by adding grated ginger or cinnamon, chopped nuts, raisins or dried fruits to the dough.
6. We extinguish the soda and add to the dough.
7. Mix all ingredients, add wheat flour and knead soft dough.
8. Form the dough into small balls, no more than 3 centimeters in diameter and spread on a baking sheet covered with parchment. Vegetable oil makes the dough fat enough, so there is no need to grease the sheet with fat: the cookies will definitely not stick. We put the baking sheet in a preheated oven, bake for 30-40 minutes at 180 degrees.
