Step-by-step cooking of small manniks in yogurt with apricots in a pan, recipe with photo:
1. Pour semolina, sugar, salt into a bowl for kneading dough and stir.
2. Next, pour in yogurt at room temperature. This is important because in a cold fermented milk environment, soda does not work. Therefore, remove the curdled milk from the refrigerator in advance.
3. Pour in vegetable oil and knead the dough. Adding oil to the dough will allow less oil to be used in frying.
4. Beat in an egg and knead the dough well. Leave it to stand for half an hour so that the semolina swells, increases in volume, and the dough becomes denser.
5. After this time, add baking soda to the dough and stir.
6. Wash the apricots, remove the pits, cut into small cubes and send to the dough. Stir. Do not add too much fruit, otherwise it will be difficult for the dough to rise.
7. In a well-heated frying pan, greased with a thin layer of vegetable oil, put the dough with a tablespoon. Fry the pancakes over medium heat for 1, 5-2 minutes and turn them over to the other side.
8. Bring small manniks to readiness in curdled milk with apricots in a pan, frying them on the other side until golden brown. Serve them to the table with any jams, marmalades, ice cream, coffee, etc. Although, thanks to the fruit filling, they can be eaten without additional toppings.
