- Sprinkle vegetables with water and smoke for 15 minutes.
- We turn them over to the other side and stand for another 20 minutes.
- Remove the grate from the heat and let cool the spices.
The pepper should not turn black, if this happens, we can assume that it is spoiled - carcinogens and toxins have formed in it.

Chipotle recipes:
- Ribs … Rinse them (1 kg) well, rub with salt and pepper, letting it brew for one hour. At this time, you should boil smoked pepper (100 g) for 15 minutes, having previously cleaned it from seeds, "legs" and tails. Now chop the garlic (6 cloves), chop the onion (2 pcs.). Fry all this, combine with the main vegetable and grind in a meat grinder. Next, chop the beef ribs into small pieces, pour over the prepared dressing, rice vinegar (1 tablespoon) and red wine (2 tablespoons). Salt and pepper the mixture and leave to simmer over low heat, adding 1 cup of boiled water. The cooking time is 2 hours.
- Baked chicken … To make 5 servings, you first need to fry the onion (2 pieces) and garlic (5 cloves). Then clean the carcass, rub it with salt and marinate in a solution of 2 liters of water, 3 tbsp. l. apple cider vinegar and 3 tbsp. l. lemon juice. Leave it on for about 3 hours while you prepare the filling. Here you need to twist 3 pieces in a meat grinder.pepper and combine them with other ingredients. The mass should be salted and used for stuffing the chicken. Then it is placed in a well-heated oven and baked for an hour.
- Sauce … Peel and bake the head of garlic. After cooling, chop it and mix with twisted pepper (100 g). Then add a pinch of cloves, vanilla and coriander. Then pour in 2 tsp. vinegar, 1 tsp. maple syrup and 2 cups seedless tomato. Salt all this and simmer over low heat for an hour. After that, grind the mixture and transfer to a jar, which should be stored in the refrigerator. The prepared sauce is served with side dishes and soups in special dishes.
- Spicy stew … Boil white beans (200 g), sauté diced potatoes (3) and chopped onions (2). Then add the pulp of 3 cloves of garlic, salt to taste and pepper (2 pcs.). Next, pour the mass with lemon juice (3 tablespoons) and olive oil (50 ml), setting to stew for 30 minutes. Finally, add chopped cilantro into it.
- Meatballs … Soak 3 unsweetened breadcrumbs in 100 ml of milk. Fry three chopped pieces of meat nut until golden brown and let dry on a napkin. In the remaining fat in the pan, sauté chopped garlic (6 cloves), onion (2 pieces) and pepper (150 g). Pour some water into the mixture and let it evaporate. Next, add all the ingredients to the mass prepared from milk and breadcrumbs. Now beat in 1 egg, add salt to taste and chopped parsley, which will be enough for 10 g. Then roll up small balls, grind them with flour and fry in vegetable oil over low heat. If there are no contraindications for chipotle pepper, then ready-made meatballs can be used as a main dish and as a component for making soups, side dishes, salads.
