Then, literally in 20 minutes, cook a delicious fresh vegetable soup. For the recipe, use any sweet pepper to taste: red, yellow, green. The soup will be most beautiful with brighter fruits. Ingredients:
- Chicken hearts - 150 g
- Salt - 1 tsp or to taste
- White cabbage - 200 g
- Ground black pepper - a pinch
- Sweet pepper - 1 pc.
- Chicken stomachs - 15 g
- Bay leaf - 2 pcs.
- Asparagus beans - 200 g
- Allspice peas - 3 pcs.
- Potatoes - 2 pcs.
Step by step cooking of offal soup with pepper and green asparagus, recipe with photo:
1. Wash the offal (hearts and stomachs), cut off the veins with films and put them in a cooking pot.
2. Pour the offal with drinking water and place on the stove to cook. After boiling, turn the heat to the minimum setting, salt and simmer under a lid for 1-1.5 hours.
3. Rinse the boiled offal under running water and cut into medium-sized pieces.
4. Peel the potatoes, wash and cut into medium-sized cubes.
5. Chop white cabbage into thin strips.
6. Wash the asparagus beans, cut off the ends on both sides and cut into 2-3 pieces of 2 cm each.
7. Put potatoes in a saucepan, fill with drinking water and place on the stove.
8. Add offal to potatoes and boil.
9. After 15 minutes of boiling the soup, add sliced bell peppers to the pan.
10. Next, add the shredded cabbage.
11. Send the asparagus beans to the pot.
12. Season the soup with salt and black pepper, add bay leaves and peppercorns. Boil the stew and simmer, covered, over low heat for 5-7 minutes.
13. At the end of cooking, add chopped greens to the offal soup with pepper and green asparagus and boil for 1 minute.
