Ruddy, golden and tender - potato pancakes with bread crumbs. This is a fairly hearty and nutritious dish. The pancakes are very tasty, airy and with a thin crispy crust. This is a very simple dish, no frills, but it is incomparable in its simplicity! Mashed potato pancakes are a great breakfast, dinner, snack or snack throughout the day. They are delicious to eat with sour cream, mushroom or other favorite sauce. Delicious potato pancakes on the second day. However, as they say, how many people, so many tastes, so there are many options for making potato pancakes. For example, breadcrumbs can be substituted with flour or semolina. But with semolina, the potato mixture should stand a little, about 15 minutes, so that the cereal swells. If you like fresh herbs, you can add a little chopped green onions, parsley, dill, cilantro, etc. to the cutlets. - Potatoes - 4-5 pcs. medium size
- Ground bread crumbs - 2 tablespoons
- Eggs - 1 pc.
- Ground black pepper - a pinch

- Flour - 1 tablespoon
Step by step preparation of potato pancakes with bread crumbs, recipe with photo:
1. Peel the potatoes and wash them under running water.
2. Cut the potatoes into medium-sized pieces, place in a cooking pot and cover with drinking water. Season with salt and boil. After boiling, turn the heat to the minimum setting and cook the potatoes, covered, until tender. If desired, during cooking, you can put bay leaves and allspice peas in the pan, which are removed from the pan at the end of cooking.
3. When the potatoes are ready, drain off all the water.
4. Combine potatoes with ground breadcrumbs, flour and a raw egg. Season food with ground black pepper. Mix everything with a crush until the consistency of a homogeneous puree.
5. Powder your hands with flour so that the dough does not stick. Divide the dough into 10-12 equal portions and form into round or oval pancakes.
6. Pour vegetable oil into a frying pan and heat well. Place the pancakes on the bottom of the pan. Turn on medium heat and sauté them for about 5 minutes until golden brown. Then turn the pancakes over and cook for the same amount of time until golden brown.
7. Put the finished fried potato pancakes with breadcrumbs on a paper napkin so that it absorbs all excess fat. Place another sheet of napkin on top and blot the remaining greasy oil with it. Serve the finished dish with your favorite sauce or freshly brewed tea.
