Duck goes well with fruit, which has long been proven by many recipes. Apples are a standard poultry addition that everyone uses. Yes, this is a win-win combination, but in this review I will provide a more interesting culinary experiment. This is another variation of the Christmas main course - a recipe for duck baked with pears in a plum-lemon sauce in the oven. The delicate taste of pear and the bright aroma of the sauce are in perfect harmony with the tender bird. Juicy duck meat with sweet and sour sauce and aromatic pears - a fireworks of taste sensations. The pears are soaked in meat juice and fat, without interrupting the taste of the meat. The duck is impregnated with the aromas of the sauce, and the fat is enriched with spices. Duck meat tastes much more interesting than chicken meat, and a whole baked duck looks spectacular. Therefore, it is the perfect treat for a dinner party. Cook a duck according to this recipe, I'm sure no one will remain indifferent. Everything is perfect here: incredible sauce, spices that give an amazing aroma, the most tender meat and a crispy spicy crust.

Take pears of any size and variety, as long as they are dense. Otherwise, during baking, they will turn into a puree mass. Before you start cooking, keep in mind that one young duck weighing about 2 kg is designed for four eaters. Therefore, if you are planning a party with more than four adults, cook two carcasses.

5. Wash the duck, scrape the skin with an iron sponge to wash off all the black tan. Remove internal grease and dry with a paper towel. Coat the poultry with the sauce and marinate for 2 hours at room temperature. You can keep it in the sauce for a longer time, for example, 6 hours. But then put the bird in the refrigerator.

Note: for a duck dish to turn out delicious, you must choose the right bird. Good quality carcass is well-nourished, not slippery and has no expressive smell. The bird should have firm firm breasts and the skin should be shiny, dry, soft and smooth. The color of the meat in the cut should be deep red.

6. Wash and dry the pears with a paper towel. I do not recommend cutting them, it is better to do this after cooking. Otherwise, there is a risk that after baking the pears will lose their shape and turn into mashed potatoes.

Stuff the poultry with fruit and place on a baking sheet. Send the duck with pears in plum-lemon sauce to bake in a preheated oven to 180 degrees for 2 hours. The baking time is considered 40-45 minutes per 1 kg of bird weight, plus 20 minutes for the whole carcass.
