1. Rinse the chicken fillet under running water and dry with a paper towel. Cut them lengthwise and beat off a little on both sides with a kitchen hammer. Do not beat hard so that the meat does not become too thin, otherwise it may burn. Use the side of the hammer with the teeth, it is intended specifically for meat. To prevent a lot of splashes when beating, which can stain the work surface, cover the meat with cling film.
