The meat comes out fragrant, tasty and juicy, but only if it is cooked correctly. But regardless of heat treatment, the main feature of the recipe is to achieve juiciness and tenderness of the meat. To prevent this from happening, you should follow the recipe without deviating from the recipe technology.

Pork is tender and tasty when used fresh and young. This can be determined by the light color, without windy crusts. The surface after pressure is easily restored, and the pits should not remain. The easiest way to make a mistake with the choice of quality meat is to buy it frozen. That is why it is better to take chilled pork. Cutting pieces is also of no small importance. Regardless of the size of the slices, it is better to cut them across the fibers. If the meat remains tough for a long time, then increase the stewing time. You can take any tomatoes for the dish: red, yellow, pink, large, small, cherry. You can also add fresh, frozen, or dried tomatoes to the dish. In addition to tomatoes, other vegetables, herbs and spices can be added to dishes.

1. Wash the meat, strip off the film and veins, also cut off excess fat if there is too much of it. After that, cut the meat into small pieces, about 1 cm each. I used this meat dish for seasoning pasta, so I cut the meat finely. However, if desired, you can cut it into larger pieces; splash the oil in a skillet and heat it well. When it starts to smoke, add the pork pieces to the skillet.

2. Fry the meat over high heat until golden brown, stirring occasionally. Make sure that it is located in a pan in one layer, otherwise the pork will not be fried, but stewed. Bring it to a golden brown.

3. Put the cooked meat out of the pan, and put finely chopped onions and garlic in its place.

4. Saute the onion and garlic until transparent over medium heat.

5. Put the fried onion and garlic, and put the finely chopped tomatoes in the pan. They can either be grated on a coarse grater, or finely chopped.

6. Cook the tomatoes over medium heat to let them juice and turn into a thick sauce.
