I came across an interesting recipe for a delicious dish, pumpkin curry, which may please not only lovers of spicy, aromatic dishes, but also those who adhere to a vegetarian menu. Ingredients:
- Pumpkin - 500 g
- Bulb onions - 1 pc.
- Garlic - 3-4 teeth.
- Cream 10% - 100 ml
- Curry - 0.5 tsp
- Ground cumin - 1 tsp
- Ground coriander - 2 tsp
- Ground red pepper - 0.25 tsp
- Parsley greens - 1 bunch.
- Water - 1 tbsp.
- Salt to taste
- Sugar - 1 tsp
- Vegetable oil - 2-3 tbsp. l.
How to make pumpkin curry step by step:
1. Prepare all the food you need for the dish: wash and peel the vegetables. Finely chop the onion and garlic. Cut the pumpkin into medium sized pieces.
2. In a preheated skillet, fry the onion and garlic for 4-5 minutes. When the vegetables are lightly browned, add the sliced pumpkin slices to them. Fry for another 2 minutes.
3. Pour all dry spices into the pan, stir, and let it warm up for 1 minute.
4. Pour water and cream over the pumpkin. Let it simmer over high heat. For curries, you can take cream of any fat content, and also replace it with coconut milk.
5. Continue cooking the curry over low heat, covered, until the pumpkin is tender. It will take about half an hour.
6. If it seems to you that the curry is not thick enough, you can grind some of the pumpkin with a blender or a potato pusher.
7. The finished dish can be served garnished with chopped parsley.
