The most important thing is to use warm foods: kefir and eggs. Therefore, you should take care of this in advance and remove them from the refrigerator. And, of course, you will need to chop the cabbage well with a blender or a sharp knife.
The taste of cabbage pancakes is completely independent of the season in which you cook them. Although experienced connoisseurs claim that the most delicious pancakes are obtained from young juicy cabbage. For the recipe, white cabbage is taken. The amount of flour used will depend on her age. A young vegetable is juicy, so you need a little more flour than usual. It is permissible to replace kefir for the recipe with other fermented milk products.

Ingredients:
- White cabbage - 250 g
- Kefir - 200 ml
- Flour - 150 g
- Eggs - 1 pc.
- Salt - 0.5 tsp
- Vegetable oil - for frying
- Baking soda - 1 tsp
Step-by-step cooking of cabbage pancakes with kefir:
1. Wash the cabbage, dry it with a paper towel and chop it into small strips using a sharp knife or blender. Place it in a mixing bowl.
2. Add flour to the cabbage and sift through a fine sieve.
3. Pour the products with kefir at room temperature.
4. Next add a warm egg. Since soda reacts only in a warm acidic environment, do not forget to remove the kefir and eggs from the refrigerator so that they warm up.
5. Knead the dough. Adjust the taste with salt and add baking soda. Spray baking soda over the entire dough so that there are no lumps. It is desirable to sift it through a fine sieve.
6. Place the frying pan on the stove, add vegetable oil and heat well. With a tablespoon, spread a portion of the dough, forming it into a round or oval shape, and fry the pancakes for about 2 minutes until golden brown.
7. Flip the pancakes over and cook for the same amount of time until golden brown. Serve hot cabbage pancakes with any sauce, both sweet and salty. Since these pancakes are universal, they are combined with sour cream, and with garlic sauce, and with jam or jams.
