Zucchini is a healthy vegetable that is also low in calories and dietary. Its 100 grams contains 20 kcal. In addition, it contains a large amount of vitamin C. The vegetable is a diuretic, thanks to this, salts and excess fluid are removed from the body. As soon as this product is not prepared: it is stewed, fried, baked. Today I'll tell you the recipe for pancakes. The site already contains several similar dishes, but in this review I will teach them how to make them using kefir and rye flour. Thanks to the addition of a fermented milk drink, the pancakes come out more fluffy and softer, and rye flour gives satiety, while it is much healthier than wheat flour.
I also want to emphasize that such pancakes are best used for breakfast. In the morning we have the greatest physical activity, from which the body needs glucose, which is most easily absorbed in the morning. Although you can bake such pancakes not only for breakfast, but also for an afternoon snack or dinner. If you do not have yogurt at hand, then you can replace it with yogurt. Ingredients:
- Zucchini - 1 pc.
- Eggs - 1 pc.
- Kefir - 100 ml
- Rye flour - 100 g
- Salt - a pinch

Step-by-step preparation of zucchini pancakes, kefir and rye flour:
1. Wash the zucchini and pat dry with a paper towel. Cut off the ends on both sides and use a coarse-toothed grater.
2. Grate the zucchini.
3. Put the zucchini shavings into a bowl and add the flour with a pinch of salt. Zucchini is very watery, so if it secretes juice from it, then drain it first, and then add flour. Although abundant juice production occurs if the vegetable is grated on a fine grater.
4. Pour kefir into a bowl. Optionally, you can put 0.5 tsp. soda, so the pancakes will be more magnificent. But then keep in mind that kefir should be at room temperature, because soda reacts only in a warm fermented milk environment.
5. Knead the dough and pour in the egg.
6. Stir the food again. The consistency of the dough will become thinner, but not much.
7. Heat a frying pan with vegetable oil and spread the pancakes with a tablespoon. Turn on medium heat and bake the pancakes until golden brown.
8. Flip them over and cook for another 2-3 minutes. Remove the finished product from the pan and, if desired, place on a paper towel so that it absorbs all excess fat. Then the pancakes will become less high-calorie.
