Ingredients:
- Pork - 0.5 kg
- High fat milk - 200 ml
- Sugar - 1 tsp
- Salt - 0.5 tsp
- Ground black pepper - 0.5 tsp
- Other spices (paprika, rosemary, thyme) - pinch each
- Egg - 1 pc.
- Wheat flour - 100 g
- Vegetable oil for frying

Rinse the pork flesh under running water, pat dry with a paper towel and cut into finger-sized slices. Do not forget that you only need to cut the meat across the fibers: only in this case the chops will turn out to be juicy and tender. Use a hammer to lightly beat each piece of pork on both sides.
Combine sugar, salt and aromatic spices. The pork marinating mixture is ready.
Sprinkle each chop evenly with the spice mixture on both sides.
Leave the chops to marinate for at least 10-15 minutes.
Pour the milk over the chops so that they are completely covered in the liquid. For this stage, you need to take milk of the highest fat content, ideally, it is better to use whole homemade milk. Leave the chops for 1, 5-2 hours. Turn them over from time to time, stirring. During the time that the meat is in milk, it will absorb almost all the liquid, swell and become very soft.
Before frying, roll each pork chop in flour.
And immediately soak in an egg whisk.
You need to fry the milk chops in a hot frying pan in well-heated vegetable oil. As soon as each side of the chop is appetizing brown, remove the meat from the heat.
