To properly marinate a kebab is a great art. Since its taste in finished form depends on it. Having violated the recipe, the shish kebab can turn out to be either dry or sugary. And preparing a marinade so that it is not possible to tear yourself away from the kebab is not an easy task. While the first days of autumn are pampering us with warm days, and it is possible to spend time in nature, it will not be superfluous to learn a few tips and a step-by-step recipe with a photo of how to properly cook pork kebab in an onion marinade with spices. Of course, there is no single recipe for marinating kebabs. Every cook and people have their own. But the proposed recipe has been repeatedly tested and belongs to a simple classic version.
It turns out a kebab with onion juice super-tender, juicy and aromatic due to the fact that the meat is pre-marinated in freshly squeezed onion juice with spices. The process of making a shish kebab is possibly a little more complicated because some of the onion will have to be finely chopped, but the result is worth it! But in order for the kebab to turn out excellent, you should choose the right meat. It should be chilled, not frozen. Chilled meat should be soft, when you press on it with your finger, the fossa should quickly recover. Choose lighter meat, because it is younger. It is better to give preference to a pork neck with fat layers, then the kebab will be juicy and fatty. A loin is also ideal. You do not need to be afraid of white loose fat, because he piles up.

Ingredients:
- Pork - 2 kg
- Table vinegar - 2 tablespoons
- Bay leaves - 4-6 pcs.
- Ground paprika - 1 tsp
- Salt - 1-2 tsp
- Ground black pepper - 1 tsp
- A mixture of freshly ground peppers - 0.5 tsp
- Onions - 9 pcs.
- Sugar - 0.5 tsp
Step-by-step cooking of pork kebab in onion marinade with spices, recipe with photo:
1. Peel the onions and wash them under running water.
2. Divide the onion in half and cut one part into 1 cm thick rings. Place it in a deep bowl, add vinegar, sugar and some drinking water. Stir and leave to marinate.
3. Wash the meat and pat dry with a paper towel. Cut it into slices about 5 cm across the grain and place in a large saucepan for pickling.
4. Grate the remaining onions on a fine grater or chop in a food processor and add them to a saucepan with meat. Thanks to the onion juice, the meat will not only soften, but also the kebab will turn out to be unusually fragrant.
5. Add black pepper, a mixture of freshly ground peppers, ground paprika and bay leaf to the meat with onions.
6. Stir the onion and meat well to distribute the spices evenly.
7. Place the pickled onion rings over the meat. Do not stir. Leave the pork to marinate for 1 hour.
8. Skewer the pieces of meat with onion rings. Place the meat on a skewer across the grain.
9. Prepare coals with good heat and add skewers with kebabs.
10. Cook the pork skewers in the spiced onion marinade over the coals without flame, turning occasionally so that the meat is evenly cooked on all sides. The average cooking time for a kebab is usually 20-30 minutes, depending on the heat of the coals. Serve immediately after cooking.
