Chanterelles are mushrooms that can safely be given the highest score for taste, appearance, and ease of processing. If you bought or brought chanterelles from the forest, some can be boiled and frozen, and some can be cooked by frying them with onions. At first glance, such a simple dish will feed you to your fill. Fried mushrooms can be served with potatoes or some kind of porridge, as well as a side dish, with poultry or meat. The dish we are about to prepare does not take long. In addition to the mushrooms themselves, you only need a few components, and even a child can cope with the process. So we put on a side dish and fry the chanterelles.

- Bulb onions - 1-2 pcs.

Forest mushrooms are never as pure as, for example, champignons. Therefore, in order to cleanse the mushrooms from dry leaves, needles, sand or other small debris adhering to them, you first of all need to soak them. Then we wash the mushrooms, changing the water several times.
Cut pure mushrooms at random, fill with salted water and boil lightly. 5 minutes will be enough.
Peel the onions and cut into medium-sized cubes. We put a frying pan with vegetable oil on the fire. Slightly simmer the onion in a skillet.
Add chopped chanterelles to the onion. Be prepared for some liquid to come out of the mushrooms.
We fry the chanterelles for 20-30 minutes. It is recommended to salt and pepper the mushrooms closer to the end of cooking, so add spices when all the liquid has evaporated from the pan.
You can serve chanterelles with fresh herbs. As an independent dish, side dish or as part of a complex side dish, they will be great.
