Therefore, such delicious mushrooms can be boiled, stewed, added to soups, sauces, salads, main dishes … I want to cook fried chanterelles with sour cream - a dish that goes with a bang in our family. The rich mushroom aroma is complemented by vegetables, and the sour cream filling makes the dish very satisfying and incredibly tasty. So let's get started!

- Chanterelles - 1 kg
- Bulb onions - 1-2 pcs.
- Sour cream - 150 g
- Greens
- Salt, pepper - to taste

Step by step cooking of fried chanterelles with sour cream and onions
The chanterelle is a forest mushroom, so it is worth soaking them for 30 minutes so that debris will go away from the caps and legs: leaves, spruce needles, etc. After the time has passed, drain the dirty water and, if necessary, repeat this step again until the water is clean and mushrooms will not satisfy you.
Discard the chanterelles on a sieve, drain the water, and grind them. Mushrooms can be chopped or torn.
Pour the prepared mushrooms with clean water and place on the stove. Salt a little. Boil the chanterelles for 5 minutes, skimming off the resulting foam.
Cut the onions into small cubes. You can adjust the amount of onions yourself: you can take a large onion if your family loves it, but then the dish will turn out to be sweeter, with an emphasis on spicy vegetables. Still, I advise you to have 3-4 times less onion than mushrooms. After all, the chanterelle is the star of this dish!
Lightly fry the onion in a little vegetable oil.
Send the boiled mushrooms to the pan, let the liquid evaporate and fry the chanterelles until golden brown. Season with salt and pepper to taste.
Pour in sour cream, stir and simmer covered for 7-10 minutes.
Serve ready-made chanterelles in sour cream with boiled potatoes, pasta or as a side dish for meat.
