Our grandmother also baked tender pancakes and served them for breakfast, and later we ourselves learned this simple recipe. But if you move away from the classics and look into the depths of culinary knowledge, then there are a huge number of pancake recipes. Today I propose to dwell on almost the classic version, but with the addition of some zest, which will give the pancakes an appetizing beautiful yellow color. I propose to create a culinary masterpiece and surprise your loved ones by making saffron pancakes with milk.
Pancakes with milk are the most delicate, thin, delicate and invariably delicious. This is the most traditional treat for Shrovetide. Although on a simple weekday, not a single sophisticated gourmet will refuse them either. Indeed, for many of us, homemade pancakes are a symbol of family comfort and pleasant memories from childhood. In preparing all kinds of pancake recipes, it is important to observe the correct proportions and warm the pan well. The technological process itself does not take much time. Pancakes with milk can be used with different fillings or just with sour cream.

- Flour - 250 g
- Eggs - 1 pc.
- Sugar - 50 g or to taste
- Saffron - 1 tsp
- Milk - 500 ml
- Vegetable oil - 20 ml
- Salt - a pinch
Step by step cooking saffron pancakes in milk, recipe with photo:
1. Pour milk into the pancake dough container. I advise you to warm up the milk to room temperature so that the pancakes are more tender. Hot milk can be used, though. Then the pancakes will turn out to be custard, fluffy and in a hole.
2. Pour vegetable oil into the milk. It is necessary to prevent the dough from sticking to the bottom of the pan while baking the pancakes. If you do not add it, then grease the bottom of the pan with a thin layer of oil before baking each pancake.
3. Beat the eggs into the dough.
4. Mix the liquid components well to form a homogeneous liquid base. Pour salt and sugar into it and stir again until completely dissolved.
5. Pour flour into the dough. It is better to sift it through a fine iron sieve to enrich it with oxygen. This will make the pancakes more tender and fluffy.
6. Knead the dough until smooth and smooth so that there are no lumps. This can be done with a whisk or blender.
7. Pour saffron into the finished dough.
8. Stir it again. The dough will immediately change color and acquire a yellow tint, which will become more intense and bright after baking the pancakes.
9. Put the frying pan on the stove, grease it with a thin layer of butter or lard, so that the first pancake is not “lumpy”. Further, a similar procedure can be omitted. Pour a ladle of dough into the pan and twist it in all directions so that the dough spreads over the entire bottom.
10. Bake the pancake on one side for 2 minutes, then turn it over and cook for another 1 minute.
11. Serve ready-made pancakes to the table with any kind of firewood. For example, sour cream, jam, jam, condensed milk. You can also stuff them with any filling, or make a sweet or not sweet cake.
