If you cannot eat fatty pork, and the chicken is pretty fed up, then veal will be the ideal choice. It is lean meat, so it can be included in dietary and children's menus. Many different dishes are prepared from veal: soups are cooked, baked in the oven, fried in a pan … But one of the most delicious and classic dishes of it is veal stewed with vegetables. The meat is very tasty to stew with any vegetables: with carrots, bell peppers, tomatoes, mushrooms, onions, cabbage … The dish can be prepared from everything that can be found in the refrigerator and with all kinds of seasonal vegetables. In any case, you will get a dietary meal that will be an ideal choice for all family members. This dish is perfect for the summer. Veal stew with vegetables can be consumed at any time of the day, even in the evening, while not harming your figure.
The proposed recipe is easy to prepare and repeat. Any housewife can handle it, incl. and inexperienced. For the recipe, take fresh veal, it will take no more than 1.5 hours to cook it, and the defrosted meat will have to be stewed for 2.5 hours. This recipe can be used to cook any other tender meat, such as chicken fillet, pork or beef tenderloin. At the same time, keep in mind that the stewing time will depend on the selected meat: the harder meat takes longer to stew.

Ingredients:
- Veal - 500 g
- Sweet pepper - 1 pc.
- Salt - 1 tsp or to taste
- Ground black pepper - a pinch
- Tomatoes - 2 pcs.
- Onions - 1 pc.
- Greens (any) - a small bunch
- Carrots - 1 pc.
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves
- Flour - 1 tablespoon
- Butter - 20 g
- Allspice peas - 3 pcs.
- Bay leaf - 2 pcs.
Step-by-step cooking of stewed veal with vegetables, recipe with photo:
1. Wash the meat under running water and dry it with a paper towel. Chop it in medium pieces and bread in flour for a golden brown crust.
2. Wash all vegetables (tomatoes, onions, bell peppers, carrots and garlic) and cut into equal cubes. First, peel the carrots with onion and garlic, and remove the seed box from the sweet pepper.
3. Put the pan on the stove, add butter and vegetable oil. Heat well.
4. Place the meat in a hot skillet and fry it on both sides until golden brown. Season it with salt and black pepper.
5. In another frying pan, heat the vegetable oil and send chopped onions, bell peppers, carrots, garlic and finely chopped herbs to fry.
6. Saute vegetables over medium heat for about 10 minutes and add prepared tomatoes to them. Stir and cook for 5 minutes.
7. Put the fried pieces of meat in a frying pan with vegetables and add a little water so that it covers 1/4 of the meat. Place bay leaves and allspice peas. Boil, turn the heat to the minimum setting and cook the dish for half an hour. Serve the cooked veal stew with vegetables on its own. Although, if you want a more hearty dinner, then boil rice, spaghetti or new potatoes with it.
