The rich Caucasian cuisine is rich in various meat delicacies. Any housewife in the Caucasus knows how to fry lamb ribs so that they are saturated with their own juice, become tender and fragrant. The treat is prepared only from fresh and young lamb meat. Then it will taste great. The dish is simple to prepare, but it needs to be cooked properly for the true lamb flavor to unfold. The recipe itself does not require exotic foods. There is nothing superfluous here, and spices only favorably emphasize the natural taste of meat. Of course. fried lamb ribs are not low-calorie food, but their great taste makes you forget about it.

When buying lamb, pay attention to the meat and the age of the animal. The meat of a young lamb is colored in light (not bright) shades of red, the fat is white and very little, the ribs are located at a great distance from each other and the bones are very thin, and the unpleasant aroma is completely absent. Older individuals are characterized by increased rigidity. Such meat is dark red, fat with a yellow tint, the ribs are large and there is practically no distance between them. But even such mature meat can be cooked deliciously. To do this, it is pre-soaked and marinated in spices and vegetables. Then the dish will have an original taste and aroma. Also keep in mind that if you bought meat, but you are not going to cook it right away, then the optimal conditions for storing it are 4-7 degrees for 2 days. For a longer period, they need to be frozen. Defrosting lamb should be gradual, without aggressive heat.
