Speaking of pork hooves, the hearty and rich jellied meat immediately comes to mind. And few people think that they can be prepared in another way. Today we'll talk about cooking boiled-baked pork hoof. There is already a similar recipe on the site, but then I just baked the leg in the oven. And today I propose to boil it first. Thus, it will turn out softer, softer and juicier.

When choosing pork legs in the market or in the store, pay attention to the color and smell. Fresh should smell good meat. They are well baked, no stubble and no damage. Dark prints, blue-gray tint indicates that the legs are not fresh, and they may have been frozen several times. Hoof cut should be flat, moist, clean and free from ichor. Their skin is elastic, and if you press on the softest part, then the fossa will quickly level out.

You can cook the hooves in any marinade you like best. For example, honey-glazed legs are a favorite dish of the Swedes; they are cooked in a sweet-spicy soy sauce in China, in the Czech Republic they are baked in beer, in Italy they are cooked with tomatoes, olives and garlic, and the Germans prefer to cook them with sauerkraut. As you can see, the options for marinades and sauces can be varied.
