New Year is not only a family holiday, but also a holiday of folk traditions. For example, one of the traditions is a Christmas tree, because without it there is no New Year at all. Another New Year's Eve tradition that has existed since the post-Soviet period is that the well-known Olivier salad should be on the New Year's table. This salad is the most popular and loved by many, and without it, New Year's Eve is simply unthinkable. Therefore, on New Year's holidays, you can meet him on the table in almost every family.
It is prepared in all sorts of variations and for every taste. Since there is still debate about its original recipe, tk. to whom, the author of the salad Lucien Olivier, passed on the original recipe is unknown. But according to assumptions, it consisted of hazel grouse fillet, boiled egg, boiled potatoes, gherkins, unknown soy-kabul, mayonnaise and lemon juice.
Today, from the above list, only eggs, potatoes and mayonnaise have remained unchanged, and the rest of the products are added at the discretion of each chef. For example, a meat product is also present in the dish, but sausages and meat of other birds are most often used.

Ingredients:
- Potatoes - 3 pcs.
- Carrots - 2 pcs.
- Eggs - 5 pcs.
- Pickled gherkins - 8 pcs.
- Fresh cucumber - 1 pc.
- Smoked chicken leg - 2 pcs.
- Mayonnaise - 200 g
- Salt - 1 tsp or to taste
Cooking New Year's Olivier
1. Wash potatoes and carrots and boil in salted water.
2. Rinse the eggs with water and boil them hard.
3. Wash smoked chicken legs and boil as well. In principle, you don't need to boil them. I do this so that I have smoked broth, on which I then cook the pea soup.
4. When all the products are prepared, they should be well cooled, and then start chopping vegetables. So, peel the carrots and cut into cubes. Try to cut all products to the same size, about 7-8 mm, then the salad will look beautiful.
5. Peel and chop the potatoes.
6. Remove the skin from the smoked ham, it is not needed in the salad. Separate the meat from the bones and cut into pieces.
7. Peel and chop the eggs.
8. Wash the pickled and fresh cucumber and cut it too.
9. Place all food in a large bowl, add mayonnaise and stir well. Season to taste with salt and refrigerate the salad.
10. Ready salad can be put in a salad bowl, or on a dish in the form of a Christmas tree. Make pine twigs from dill greens, and on top of the head a star from carrots or cucumbers.
