Apricots are widely used in cooking and confectionery. But with them they mainly cook pancakes, but how do you bake pancakes? After all, the patches should be thin, and you cannot grind apricots so finely. The answer is simple - we will puree apricots for pancake dough with a blender.
The apricot pancake dough itself can be kneaded with fresh milk, but it can be replaced with any other liquid of your choice. By adding apricots, the consistency of the dough will not be too thin, which makes frying pancakes much easier.
You can use any berries for pancakes, both fresh and frozen. Apricot jam will also work, but in this case, you will need to limit the amount of added sugar. The main thing is that whatever apricots you use, they will still bring tremendous benefits to your body.
The benefits of apricot
Apricots are of great benefit in treating weakened immune systems. The fruit contains beta-carotene, which restores vision and improves skin condition. It is contained in such an amount that only 300 g of berries will provide the body with a daily intake of this vitamin.
Apricot also prevents the development of cancer. And the magnesium and phosphorus contained in apricot will improve brain function. Apricots are very useful for children, because they keep the baby mentally stressed and help focus his attention. In amnesia, this fruit is also indicated because it contains potassium and iron.

Making apricot pancakes
1. Pour flour, salt and sugar into the kneading bowl. Beat in an egg and pour in refined vegetable oil.
2. Pour milk into the dough and knead the dough well until smooth. Wash the apricots, remove the pits and cut into small cubes, which are added to the dough.
3. Use a blender to puree the apricots. Your dough will become a little reddish in color and a thicker consistency.
4. Heat the pancake pan and coat with a small piece of bacon or butter so that the first pancake does not turn out "lumpy". After the ladle, take the dough and pour it into the pan, which you rotate in all directions so that it spreads evenly.
5. Fry the pancakes on both sides for about 2 minutes until golden brown. Then you can serve them with sour cream or apricot jam.
If you want to cook such pancakes in the morning on a weekday before work, then to save time, I recommend kneading the pancake dough in the evening, sending it to the refrigerator, and baking a stack of patches in the morning.
