In addition to cottage cheese, some recipes include flour or semolina. Other recipes eliminate flour and add oatmeal.
Everyone loves any cheese pancakes, but not everyone has a desire to cook this delicacy in the morning. But there is a great way to have breakfast and enjoy this dish without spending a lot of time cooking. You can immediately cook large quantities of cheese cakes and freeze them for future use. Then, when there is no time to fiddle with the dough, you will always have a quick breakfast or dessert on hand. The taste of frozen cottage cheese pancakes at home is in no way inferior to freshly prepared ones. On the contrary, they are more crispy when fried.
You can cook frozen cheesecakes in different ways. They are fried in a pan in vegetable or butter, baked on a baking sheet in the oven, boiled and steamed. With any method of cooking, curd cakes do not require preliminary defrosting. They are prepared immediately frozen.

- Cottage cheese - 300 g
- Dried orange peel - 1 tsp no slide (optional)
- Sugar - 50 g or to taste
- Flour - 3 tablespoons
- Pumpkin puree - 2-3 tablespoons (not necessary)
- Eggs - 1 pc.
- Salt - a pinch
Step-by-step preparation of frozen cottage cheese pancakes, recipe with photo:
1. Place the curd in a bowl for kneading the dough.
2. Next, add pumpkin puree and dried orange zest. But these supplements are optional. You can make classic cheesecakes or add any other flavoring components: raisins, poppy seeds, dried apricots, apples, etc.
3. Then add eggs to the products.
4. Stir the food well.
5. Next, pour flour (preferably sifted through a sieve) with sugar and salt. Mix everything well again until smooth. If you want the curd cakes to have a uniform structure, beat the dough with a blender. If you like to feel the curd lumps, just mix the dough with a fork or spoon.
6. Sprinkle flour on your hands so that the dough does not stick, and take a small portion of it.
7. Shape the pancakes into round cakes about 1 cm thick and 5 cm in diameter, and bread in flour on both sides.
8. For freezing, select a convenient flat container: a plank, a baking sheet, a box for herbs or ice. Cover the selected container with cling film and lay out the syrniki so that they do not come into contact with each other.
9. Send the pancakes to the freezer. Turn on the "fast freeze" mode, because the faster they freeze, the more nutrients will remain in the product. When the pancakes are frozen, remove them from the cling film. This is done very easily.
10. Place compactly frozen cottage cheese pancakes in stacks on top of each other, several pieces at a time. Wrap them in plastic and send them for further storage in a freezer at a temperature not exceeding -15 ° C.
