Probably, everyone loves dumplings with sweet cottage cheese, only not everyone loves to sculpt them and because of laziness to cook on their own at home they go to the store for purchased ones, but it's not that. The store sells dumplings with cottage cheese of dubious quality, dough with chemical additives so that it lasts longer and does not crack, and is thick, and the filling is liquid and also not entirely natural, regardless of the price of the product, and they put a lot of sugar, which is already turning out from them. So if the muse found to stand in the kitchen and make dumplings with cottage cheese, then by all means do it according to my recipe - it is very simple, because the time spent will thank you with real yummy. This dish belongs to the Ukrainian cuisine, although in Russia it has also actively taken root.

Ingredients:

  • Flour - 2.5 cups
  • Water - 0.5+ glasses
  • Egg - 3 pcs.
  • Sugar - 2 tbsp. l.
  • Salt - 1 pinch
  • Cottage cheese - 250 g
  • Vanilla sugar - 1 sachet (10 g)

1. First, knead the dough. It is better to combine the ingredients in a bowl, and then knead the dough on the table. But I decided to do everything right away on the table. Pour 2, 5 cups of flour and make a depression in it, into which to drive an egg, add 1 tablespoon of sugar, a pinch of salt and immediately pour in half a glass of water.

2. Knead the dough and add some more water if necessary. The dough should knead well, be moderately soft, not too rubbery. Roll a bun and set aside, covered with a towel for 20 minutes.

3. Prepare sweet curd filling for dumplings. Put 250 grams of cottage cheese in a bowl, beat in two eggs, add one tablespoon of sugar and a bag of vanilla.

4. Grind everything well with a spoon until smooth.

5. It is desirable to roll out the dough in two approaches, since flour is added during rolling, and the residues will be rubber. Sprinkle flour on the table and roll it out into a thin layer. Cut out mugs with a cup.

Some people are faced with a problem of this nature: "I cannot roll out the dough, it is rubbery and it turns out very thick." Tip: Moisten the dough with water and knead it again to the desired consistency.

6. Put about one teaspoon of cottage cheese in each circle.

7. Blind the edges of the dumplings. Before gluing them, the edges of the circles and hands can be moistened with water or smeared with an egg. So the gluing will be more dense, and they will not scatter during cooking.

8. Cooking dumplings with cottage cheese is as easy as shelling pears. Dip them into boiling water and bring to a boil again. Then reduce the heat, but so that they gurgle and continue to cook for 5-7 minutes, as a rule, ready-made ones float up.

When serving, add a piece of butter to a plate, and then sour cream, jam, or just sprinkle with sugar to taste. But I love them with sour cream.
