Fatty duck meat goes well with peas. The dish is hearty and rich. It is good to use with increased physical activity. Soup perfectly warms the body on cold days. Today we will prepare a rich tasty puree soup from these products, which, among other things, is also very useful. Such a chowder is very different from the one cooked in chicken broth. In addition, this soup does not require a whole carcass, it can be cooked from any part: ridges or scraps.
For the preparation of duck soup, the general principles of preparation should be considered. First, only use fresh duck. Second, remove all excess and inner fat from the poultry before cooking. Thirdly, defrost frozen duck correctly, i.e. slowly, first in the refrigerator and then at room temperature. Fourth, if you want a less fatty soup, boil it with a second broth. And for density, add potatoes or cereals. Considering all these subtleties and secrets of cooking, you will get a wonderful soup that will wonderfully warm the body in chilly winter weather. - Peas - 300 g
- Ground black pepper - a pinch
- Bay leaf - 3 pcs.
- Salt - 1 tsp or to taste
- Garlic - 1 clove
- Potatoes - 1-2 pcs.
Step by step preparation of pea puree soup with duck, recipe with photo:
1. Sort the peas, sorting out the spoiled ones. Transfer to a strainer and wash. Then put it in a bowl and cover with water in a 1: 3 ratio.
2. Leave the peas for 3 hours to swell and increase in volume by 2-2.5 times. Soaking will also neutralize bloating. After this time, transfer the peas to a sieve and rinse.
3. Pour it into a cooking pot.
4. Peel the potatoes, wash, cut into any pieces and send to the peas.
5. Fill the food with water so that it covers them one finger higher.
6. Season with salt, bring to a boil, reduce heat and cook, covered, until soft. This process will take about 30-45 minutes. The peas should absorb almost all of the liquid. But if it remains, then do not drain it.
7. Grind the peas and potatoes with a crush or blender.
8. You should have a smooth, smooth consistency.
9. Do the duck in parallel. Cut the necessary part from the carcass for the soup. Remove the skin from it, remove the grease, wash, cut into slices and place in another cooking pot.
10. Fill the duck with water and place it on the stove.
11. Add bay leaves, salt and peppercorns. Boil, remove the resulting foam, reduce heat to low and cook the broth for about 1-1.5 hours.
12. Put the mashed potatoes and peas into a saucepan with broth.
13. Boil, season with minced garlic and cook food together for 5 minutes. Adjust the flavor with salt and pepper if necessary. Serve the finished soup with croutons or croutons.
