Ingredients:
- Smoked chicken breast - 1 pc. from 2 breasts
- Kefir - 500 ml
- Potatoes - 3-4 pcs.
- Citric acid - 1 tsp
- Cucumbers - 3-4 pcs.
- Eggs - 5 pcs.
- Dill - bunch
- Salt - 1.5 tsp or to taste
- Beets - 1 pc.
- Green onions - bunch
Step by step cooking smoked beetroot, recipe with photo:
1. Wash the smoked chicken breast and pre-boil. Then cool the broth and meat completely in the refrigerator. When the broth has cooled, fat may form on the surface, which should be removed from the pan. Cut the chilled meat into medium-sized pieces.
2. Wash the potatoes and boil them in their uniforms. Then cool, peel and cut into cubes about 1 cm in size.
3. Dip the eggs in cold water and place them on the stove. After boiling, cook them for 8 minutes and transfer to ice water. Cool them, peel and cut into cubes.
4. Wash and dry the cucumbers, cut off the ends and cut into cubes.
5. Wash green onions and chop finely. Do the same with dill. This recipe uses frozen dill. You do not need to defrost it beforehand.
6. Wash the beets, peel and cut into cubes.
7. Put it in a saucepan, fill it with drinking water and add citric acid to preserve its rich burgundy color during cooking. Send the saucepan to the stove, boil and cook for half an hour until the fruit is tender.
8. Put all prepared vegetables in a large saucepan, add boiled beets and pour in beet broth.
9. Add salt to food.
10. Pour kefir into a saucepan.
11. Next, pour in the smoked broth. Pour it through a fine sieve so as not to get debris into the dish. Mix the products well and serve the smoked beetroot soup.
