Offal dishes, incl. and from the liver, since ancient times, Russian housewives cooked. Of the wide range of by-products available, the easiest to prepare is the liver. It is easy to prepare, satisfying and budgetary, and goes well with various products. That is why salads with liver are very popular, without which, lately, not a single festive feast can do.
In this heading, I want to present a vegetable salad with liver, which is not only tasty, but also looks gorgeous on the table. Young cabbage with tomatoes gives it piquancy, cucumber - freshness, and egg - satiety. You can't call it easy, because besides liver and vegetables, it contains eggs, but the taste is wonderful!
Any variety of liver can be used. But I propose to combine chicken with young vegetables. This is a very useful product that should be in the diet of every person. Since it contains vitamins, amino acids and trace elements, which contribute to the treatment and prevention of many diseases.

Ingredients:
- Young cabbage - 200 g
- Fresh cucumber - 1 pc.
- Tomato - 1 pc.
- Chicken liver - 300 g
- Eggs - 2 pcs.

Cooking vegetable salad with chicken liver
1. Wash the liver under running water. Chicken liver usually does not require additional pretreatment. But if you decide to replace it with pork or beef offal, then first soak it in milk or drinking water. This will remove the bitterness from it, which is most often inherent in it.
2. After the liver, boil for 20 minutes until soft in lightly salted water. Remove from saucepan and chill slightly. Cut into large strips or cubes. You can not pour out the liver broth, but use it to prepare some other dish, for example, cook soup.
3. Wash and chop the cabbage. If the head of cabbage is old, sprinkle it with salt and press down with your hands so that it lets out the juice. You do not need to do such a manipulation with a young vegetable.
4. Wash the cucumber, wipe with a paper towel and cut into thin quarter rings.
5. Wash the tomatoes, dry them and cut them into quarters in the same way.
6. Combine all food in a deep bowl.
7. Season the ingredients with vegetable oil, salt and stir. Send it to the refrigerator to cool slightly.
8. Put the food in a serving bowl and garnish the salad with quarters of hard-boiled eggs. Although, if desired, they can be added to the salad as an ingredient and mixed with all the provisions. However, in the form of decoration, they look much more beautiful and original.
