1. Wash the eggplants, dry and cut into 5 mm rings. I recommend soaking the eggplants in a saturated saline solution for about half an hour before cooking. Firstly, when frying, eggplants actively absorb oil, and the accumulated moisture weakens this process. Secondly, the salt solution draws the characteristic bitterness out of the fruit. To bake them, it is enough to sprinkle the pieces with salt and stand for 10 minutes. After these procedures, the eggplants need to be washed and squeezed.

2. Heat vegetable oil in a skillet and add the eggplant pieces. The heating of the pan and oil should be maximum so that the sides of the eggplants are quickly browned. When cooked over a low flame, the eggplant will absorb a lot of oil. Fry the fruits on one side until golden brown. Then add salt and pepper. Turn over and cook on the other side.
