The indisputable value of cabbage in our diet is invaluable. The vegetable is rich in vitamins and nutrients. But today I propose to diversify the menu and make diet cabbage cakes with kefir. This is a great option for quick savory pastries that absolutely everyone likes. In addition, simple and affordable products are required for its preparation. Another advantage of the recipe is that you can bake muffins in just a few minutes. They are usually served as an independent snack hot or cold for tea or as an addition to first courses: soups, borscht … They are great for a light but nutritious dinner.
The recipe is very variable, so instead of white cabbage, you can use Peking cabbage, young white-headed, blue, etc. Kefir can be replaced with another fermented milk product: yogurt or natural yogurt. Ingredients:
- Kefir - 200 ml
- Eggs - 1 pc.
- Salt - 0.5 tsp
- Sugar - 1 tsp
- Vegetable oil - 50 ml per dough, 1-2 tbsp. for frying cabbage
- Wheat flour - 300 g
- White cabbage - 200 g
Step-by-step cooking of cabbage cakes with kefir, recipe with photo:
1. Wash white cabbage and chop finely. Heat a frying pan with vegetable oil, put cabbage in it and salt it.
2. Pour a few tablespoons of drinking water into a frying pan and bring to a boil. Cover the skillet with a lid and simmer the cabbage until soft, stirring occasionally.
3. Pour kefir into a deep bowl, add eggs and vegetable oil. Stir the liquid ingredients.
4. Add sugar, salt and flour sifted through a fine sieve to the liquid components so that it is enriched with oxygen, which will make the muffins softer and more tender.
5. Add the stewed and fried white cabbage to the dough.
6. Knead the dough to distribute the cabbage leaves evenly.
7. Divide the dough into the silicone dough tins. If you use iron molds, grease them first. Silicone and paper molds do not need to be lubricated.
8. Preheat oven to 180 degrees and send muffins to bake for 20 minutes. When they get a golden crust, check the readiness with a wooden skewer: it should be dry without dough sticking. If you bake a large cake using this recipe, the baking time will increase to 40 minutes.
