You can cook a lot of goodies, spending a minimum of the family budget on it, because, as a rule, vegetables are not very expensive. Eggplant cutlets are a dish that will surprise you with taste, simplicity and affordability. Ingredients:
- Eggplant - 2-3 pcs.
- Onions - 1-2 pcs.
- Cheese - 150 g
- Greens - 1 bunch
- Salt, pepper - to taste
- Bread crumbs 1 pack

Step-by-step cooking of eggplant cutlets with a photo - fast and tasty
Wash the eggplants, remove the stalks and damaged areas. Cut each in half and cut large vegetables into 3 pieces. Place in a fireproof dish or on a baking sheet and bake in the oven at 180-200 degrees until soft.
Remove the skin from the baked eggplants and chop them in any way, for example, crushing them with a fork.
Add finely chopped parsley or dill and onions, cut into small cubes, to the eggplant mass. Stir the minced vegetables, add 3-4 tbsp. l. bread crumbs for strength. Depending on how much juice the vegetables give, you can add more breadcrumbs. The main thing is that the minced cutlet is not too liquid.
We take about 1-2 tbsp. l. minced meat and on the palm of your hand we distribute it into a cake, in the middle we put a small piece of any hard cheese.
We form a cutlet, roll it in bread crumbs.
Fry the cutlets on both sides in a frying pan in a little vegetable oil until golden brown.
