Did you know that eggplants, like chameleons, can mimic mushrooms? Yes, exactly for mushrooms! After heat treatment, looking at the jar, you will not guess that there are eggplants. This recipe was shared with me by a friend who has been closing such eggplants for a long time, the success of this preparation is known not only within her family, but also many friends and relatives.
I also decided to prepare such eggplants, and of course share it with you. Moreover, the eggplant is now in full swing and the price is ridiculous. Well, definitely cheaper than mushrooms. The cooking process is also simple. Let's cook?

Ingredients:
- Peeled eggplants - 1 kg
- Garlic - 1 head
- Vegetable oil - 125 ml
- Salt - 1 tbsp l.
- Sugar - 1 tbsp. l.
- Hot pepper - 1 pc.
- Table vinegar 9% - 5 tbsp. l.
- Parsley - 1 bunch

From the specified amount of ingredients, 2 cans of 0.5 liters each are obtained and a little remains for the sample. Wash and clean the eggplants. The most convenient way is to use a vegetable knife. Cut the eggplants into cubes.
Fill the eggplants with water and bring to a boil. Cook for 2-3 minutes after boiling. You can add salt to the water. We discard the eggplants in a colander and let the water drain. It is important that the eggplants drain well, otherwise, when we fry them, the oil will splash heavily.
Heat the vegetable oil in a deep frying pan and spread the eggplants. We fry them over high heat for 5 minutes.
Add hot peppers and garlic to the eggplants. Fry for another 3 minutes.
Now add salt, sugar and vinegar, mix well and simmer for a couple of minutes. Everything can be removed from the fire.
We put eggplants tightly in jars. Pour oil from the pan on top.
Pasteurize the eggplants like mushrooms for 15 minutes if you have half-liter jars. We sterilize liter jars for 20 minutes.
We roll up the jars with sterile lids. We turn it over to check the tightness. Leave in this form until it cools completely. After that, you can transfer the conservation to storage in a cellar or pantry.
