Italian omelet frittata is a simple dish that can be prepared without a recipe, but simply with improvisation. An omelet can include a wide variety of toppings. This is a great way to use everything in the fridge: meat, cheese, vegetables. And the number of eggs is calculated based on the number of eaters and the size of the pan. The difference between French omelet and Italian frittata - in the first, the filling is wrapped in a ready-made omelet, in the second, it is laid during frying.
In this recipe, I offer a traditional Italian omelet in the most successful and light version - with tomatoes, cottage cheese and herbs. It is prepared quickly and easily, it turns out tasty and aromatic, and due to the cheese, an interesting texture is formed! But since this is an Italian dish, you can supplement it with zucchini, olives, bell peppers, olives, sausages, etc. The classic cooking method is to fry vegetables in a pan over low heat, after which everything is poured with an egg mixture and baked in the oven. You can serve the dish alone or with a vegetable salad, pasta or rice.

Ingredients:
- Eggs - 2 pcs.
- Tomatoes - 1 pc.
- Cottage cheese - 100 g
- Sour cream - 2 tablespoons
- Basil - a couple of twigs
- Cilantro - a couple of twigs
- Vegetable oil - for frying
- Salt - 1/3 tsp
- Ground black pepper - a pinch
Cooking fritata with tomatoes and cottage cheese
1. Whisk the eggs into a deep bowl and add a little salt.
2. Wash cilantro and basil, pat dry with paper towel and chop finely.
3. Add sour cream and season with black pepper.
4. Whisk the food until smooth and smooth.
5. Add cottage cheese to the egg mass, which is pre-grated through a fine sieve if you want to have a homogeneous structure. If you like to feel the whole pieces of cottage cheese, then leave it as it is.
6. Stir the food again.
7. Heat a frying pan with vegetable oil and add the tomato slices. Season with a pinch of black pepper and cook on both sides for about 1 minute over medium heat.
8. Pour the eggs over the tomatoes and send the pan to the oven heated to 180 degrees.
9. Bake the frit in a roasting pan for about 10 minutes. Do not overdo it for too long, so as not to dry it out. It should stay slightly damp.
10. Serve the ready-made breakfast to the table immediately after cooking with hot heat straight from the oven. To keep fritat warm longer, serve it in the pan in which it was cooked.
