Peel half of a large lemon, grate the zest on a fine grater, squeeze the juice. Combine ginger, garlic, pepper and lemon (zest and juice), add 3 tablespoons of sesame oil, a teaspoon of soy sauce, add sugar to taste. Peel the cucumbers (150 grams) and cut into cubes. Coarsely chop a bunch of green onions. Add cucumbers and onions to the resulting mass, serve the sauce with baked or fried fish, lettuce.
  3. Grilled perch … 600 grams of sea bass (2-3 fish) to clean from entrails, scales and gills, rinse under running water, collect excess moisture with paper towels. On the sides of the fish, make two shallow cuts closer to the upper fin. Peel three stems of fresh lemongrass, beat off with a hammer, finely chop one stem and mash with a small peeled serrano pepper, add sugar, crush into a paste, add 4 tablespoons of peanut or sesame oil. Place the remaining lemongrass stalks in the perch, coat the fish with the resulting pepper marinade. Marinate for 20-30 minutes. Fry the fish over charcoal for about 15 minutes, turning over. Serve whole fish, sprinkle with peeled, roasted serrano peppers.
  4. Turkey stew … Fry 4 large green serrano peppers on the grill, turning constantly, until the skin is charred. Place the finished peppers in a bag or cover with a plate, let them soften, peel, seeds and partitions. Coarsely chop the pulp. Prepare 2 large bell peppers and 1 kg of tomatoes in the same way. Coarsely chop 1 kilogram of turkey fillet in a meat grinder, cut 300 grams of onions into quarters. Heat a little vegetable oil in a cauldron, fry the onion until golden brown, add the minced meat, fry, stirring constantly and separating the lumps. Put prepared serranos, sweet peppers and tomatoes into a cauldron. Prepare the seasonings: mix 4 cloves of crushed garlic, 1 tablespoon of ground paprika, half a teaspoon of coriander seeds, half a tablespoon of cumin seeds, salt to taste. Pour the seasonings into the cauldron, cook for another 5 minutes. Add 500 ml of boiling water to the cauldron, bring the stew to a boil, simmer over low heat for an hour and a half, adding more water if necessary. Serve with sour cream, cilantro leaves and avocado.
  5. Green Bean and Serrano Pepper Salad … Peel 1 green serrano pepper from seeds and partitions, finely chop the flesh. Fry the peppers and 50 grams of pine nuts in vegetable oil for 2 minutes. Peel 400 grams of green beans, cut the pods in half across, boil the beans in boiling salted water for 4-5 minutes. Drain the beans in a colander, dry, season with olive oil, nuts and pepper, finely chopped bunch of parsley. Serve with red fish or baked poultry.
