I have long wanted to make exactly these fragrant cinnamon buns, but I was not sure that everything would work out. Somehow it so happened that yeast dough does not always come out for me. But still, I found a recipe that turned out the first time, so I am sharing this wonderful discovery with you. The recipe has already been written down in your favorites and while I am writing to you, the second batch of buns is already coming up in the oven.

Ingredients:

  • Flour - 500 g (dough)
  • Milk - 1 tbsp. (200 ml) (dough)
  • Eggs - 2 pcs. (dough)
  • Sugar - 60 g (dough)
  • Butter - 50 g (dough)
  • Fresh yeast - 25 g (dough)
  • Butter - 60 g (filling)
  • Ground cinnamon - 3 tsp (filling)
  • Sugar - 150 g (filling)
  • Sugar - 100 g (cream)
  • Sour cream - 200 ml (cream)
  • Cornstarch - 1 tbsp l. (cream)

The first step is to put the dough. We heat 100 ml of milk to a temperature of 40 degrees. Add fresh yeast to the milk, 1 tbsp. l. sugar and 1 tbsp. l. a spoonful of flour. Mix and leave in a warm place for 15 minutes.

In the meantime, you need to melt the butter and heat the second part of the milk. Pour milk into a ladle and add sugar. Cut the butter into chunks. Put on low heat and stir until butter and sugar dissolve.

Beat the eggs with a fork until smooth.

Add the butter mixture and eggs to the dough. We mix.

Add flour gradually. Don't blow it all in at once. You may need a little more flour when you get to kneading the dough on the table. But before you add over the norm, make sure that you knead the dough well, and this is definitely necessary.

Knead the dough for 5 minutes until it becomes very tender.

Leave the dough in a warm place for proofing for 1 hour. Cover the dough with a towel to keep it dry.

While the dough is rising, prepare a shaving brush - in a saucepan, heat butter, cinnamon and sugar.

Now we divide the dough into 2 parts and roll each part into a rectangle 3-5 mm thick. If you want more buns, roll out the dough without dividing it. Lubricate with a shaving brush.

Fold the dough with a roll on the wide side. We cut it into portioned buns. Cover the baking sheet with parchment paper and put the buns on it. We leave for 15 minutes for them to rise.

We bake buns for 35-40 minutes at 180 degrees until golden brown.

We prepare the cream with which we will cover the buns. Add sugar and cornstarch to sour cream. As soon as the sour cream starts to boil, remove the cream from the heat and mix thoroughly for several minutes. Leave it to cool completely.
