This cooking method is taken from Ukrainian national cuisine, which is famous for many nutritious potato dishes. This puree turns out to be lush, tender, airy and unusually tasty. But for it to work that way, it is important to choose the "right" potato. Varieties with a high starch content are best suited for garnish. The most delicious puree is obtained from the Adretta and Sineglazka varieties. It is better to cook this dish at one time, because after cooling and reheating, the puree already tastes wrong.

Step by step preparation of mashed potatoes with butter and sour cream, recipe with photo:
1. Peel the potatoes and wash them under running cold water.
2. Cut large tubers into several pieces so that the potatoes cook evenly, and place them in a cooking pot. Pour drinking water into a pot so that it completely covers the tubers. Season with salt and cook on the stove. Add spices and dried herbs if desired. Boil the vegetable over low heat after boiling for 15-20 minutes, periodically checking the readiness with a fork. If the appliance enters freely, then the potatoes are ready.
3. Carefully drain the broth into a separate bowl, and keep the pot with potatoes on low heat for a little more so that the remaining moisture evaporates. Then add sour cream to the hot potatoes.
4. Next, add the butter.
5. Mash potatoes with a crush or grind through a sieve. First, grind the potatoes with a pusher, and then beat a little with a mixer. This will create an airy, fluffy and tender puree. If it seems that the potatoes are very thick, then add butter or pour in the broth drained from the boiled vegetable. Serve the finished mashed potatoes with butter and sour cream immediately after cooking hot with any side dish.
