Lahmajun is the king of Turkish fast food. It is a pizza that is familiar to us, although it cannot be called a pizza in our classical understanding. It looks more like a thin yeast dough cake with minced meat, vegetables and herbs. In Arab countries, lahmajun is sold at every turn. It is baked in stone ovens at temperatures that can reach 2000 ° C. At home, cooking technology and food composition may vary depending on the region and preferences.
Lahmajun dough is made cooler than classic pizza. Therefore, the product is light and crispy after baking. For a spicy filling, lamb with vegetables or a mixture of lamb and beef are used at home. But you will not find fresh and good lamb in our country, so Russian housewives use minced beef, pork, chicken or mixed. Tomatoes are a must-have for minced meat, and the rest of the vegetables can vary depending on the chef's taste.

Ingredients:
- Flour - 280 g
- Tomatoes - 1 pc.
- Sugar - 1 tablespoon
- Onions - 1 pc.
- Sweet pepper - 2 pcs.
- Vegetable oil - 2 tablespoons minced meat, 3 tbsp. in dough
- Garlic - 1 clove
- Salt - 1 tsp
- Meat (pork) - 250 g
- Spices (sweet ground paprika, hot pepper, parsley, sumac) - in a whisper
- Green onions - a few twigs
- Dry yeast - 5 g
- Water - 130 ml
- Tomato paste - 1 tablespoon
Step by step cooking lahmajun (Turkish cuisine), recipe with photo:

1. Pour flour, sugar, yeast into a bowl and stir dry ingredients.

2. Make a small depression in the middle and pour in warm water.

3. Stir lightly and add vegetable oil.

4. Continue to stir until the dough has a uniform elastic soft texture.

5. Shape the dough into a lump, cover with a warm towel and leave for 1-1.5 hours. After this time, it will come up and increase in volume by 2, 5-3 times.

6. Prepare the stuffing products by this time. Peel the onion and garlic, remove the seed box with partitions from the pepper. Wash and chop onions and green onions, garlic, tomatoes and meat for a meat grinder.

7. Twist all food through the middle wire rack of the meat grinder.

8. Pour vegetable oil into the minced meat, mix and add tomato paste, salt, ground black pepper and all the spices with spices.

9. Mix the minced meat well until smooth. Do this with your hands passing it between your fingers.

10. Knead the matched dough and divide into 8 parts. Roll each of them thinly with a round rolling pin, about 2 mm thick, and place in a baking dish.

11. Also divide the minced meat into 8 parts and put one of them on the dough. One serving is approximately 1.5 tbsp.

12. Smooth the minced meat evenly over the dough with a thin layer, also 2 mm, as if pressing it. By this time, heat the oven to 230 degrees and send the cake to bake for 5-7 minutes. The finished lahmajun has crispy edges and a soft filling in the middle. It is consumed chilled, rolled in half or wrapped in a tube.
