How many liver cake recipes are there? Each mistress has her own. The number of layers, the minced meat for the liver pancakes, the filling, the sauce can all vary. But what unites all the recipes is that the liver cake is the very first to disappear from the table. I propose to cook it according to the recipe, according to which, for my taste, it turns out to be the most tender and appetizing.

Ingredients:
- Pork liver - 1 kg
- Chicken eggs - 3 pcs.
- Milk - 50-70 ml
- Flour - 3-4 tbsp. l.
- Onions - 1-2 pcs.
- Carrots - 1 pc.
- Mayonnaise - 1 pack
- Greens - 1 bunch
- Vegetable oil for frying
Cooking a festive liver cake stuffed with carrots and onions - step by step photos
1. Let's prepare the liver. We will wash it, cut off the films and remove knots and veins. Cut into small pieces and grind in a meat grinder or grind with a blender.
2. Add 1 egg and sifted flour to the liver and pour in milk. Salt and add pepper. Mix the ingredients. The pancake dough should resemble medium-fat sour cream. Some housewives replace flour with semolina, then letting the mince brew for 15–20 minutes, so that the semolina swells.
3. Fry liver pancakes in a hot frying pan with the addition of a small amount of vegetable oil. We do not turn the pancakes, but cover the pan with a lid so that the liver undergoes a good heat treatment. Don't worry if the shape of the pancake isn't perfect. We can fix this later. We fry the pancakes until the liver mass ends. We put the finished pancakes-shortbreads in a pile, let them cool.
4. We do not waste time, and simultaneously with frying the pancakes, we prepare the filling for the cake. Three carrots on a coarse grater.
5. Chop the onion into cubes.
6. Fry vegetables in a well-heated frying pan. We add not very much vegetable oil so that the filling for the cake is not too greasy.
8. When all the liver pancakes are ready and cool enough, cover them with a plate and cut off the edges. The cake will now have a perfectly even shape.
8. Cover the plate on which we will collect the cake with two sheets of parchment. We spread the first liver pancake, grease it with mayonnaise, put the vegetable filling and chopped greens on top. Thus, we collect the whole cake until the liver cakes run out.
9. Grease the finished cake with mayonnaise on all sides.
10. Cook two eggs hard-boiled, cool and separate the white from the yolk.
11. Grind the whites separately from the yolks on a fine grater. Sprinkle the sides of the cake with protein, and decorate the top with grated yolk.
12. Decorate the finished liver cake with chopped herbs.
13. Serve a festive liver cake with carrot and onion filling and enjoy a delicious dish.
