You can even bake potatoes or rice at the same time as the duck. Then there will be a side dish right away, and you will not have to spend time on its preparation. For the recipe, choose a medium-sized duck, about 2 kg. A very large carcass, old, which means it has tough meat that no marinade will soften. The spice mixture used for the recipe is Italian. They are sold in any supermarket.

Ingredients:
- Duck - 1 pc.
- Salt - 1 tsp or to taste
- Garlic - 2 cloves
- Ground black pepper - a pinch
- Mustard - 1 tsp
- A mixture of Italian spices - 1 tsp
- Soy sauce - 1 tablespoon
- Plum sauce - 2 tablespoons
- Lemon - 1/5 part
Step by step cooking Italian duck in the oven, recipe with photo:

1. Prepare the poultry marinade. Pour soy sauce into a deep bowl.

2. Then add the plum sauce.

3. Add the mustard, Italian spice mixture and press the garlic cloves.

4. Wash the lemon, dry it, cut a small piece and squeeze out the juice.

5. Stir the marinade well. If desired, you can add honey, saffron, cinnamon, nutmeg, etc. to the marinade.

6. Wash the duck, scrape the skin with an iron sponge to remove the black tan, remove the internal fat and chop the bird into comfortable pieces. Although, if you wish, you can bake the bird with a whole carcass.

7. Send the bird to the marinade.

8. Stir the duck well to marinade each piece to all sides. Cover the container with foil and leave to marinate at room temperature for 2-2.5 hours. If you marinate for a longer time, refrigerate it.

9. Place the poultry in an ovenproof baking dish. There is no need to peel off the remnants of the marinade. Season the carcass with black pepper and salt. Cover the Italian-style duck with food foil so that the meat does not turn out to be too dry, and send it to bake in a heated oven to 180 degrees for 1.5 hours. Remove the foil 20 minutes before cooking to brown the carcass.
