For many, the combination of sweet and salty tastes is still unusual. But some products go perfectly with each other. One of them is potato zrazy with prunes. Potatoes with dried fruits - an amazing harmony of two different products. The recipe is actually very successful, the cutlets turned out to be tasty and unusual. This is an unusually tender and ruddy potato dough with a spicy sour filling. The food literally melts in your mouth.
Such zrazy are prepared in the same way as the classic ones, with meat filling. There are no differences here. Potato dough can be made lean if you don't include eggs in the recipe. Then the dish will be lean and can be used in fasting and vegetarians. But then I recommend adding a spoonful of starch to the dough, it is a connecting link. And if you are afraid to cook a dish with prunes, then you can choose any other filling: sauerkraut, chopped boiled eggs, mushrooms, etc. Note that this dish is called zrazy, and not kartoplyaniki. There are no particular differences in these recipes, but they differ in shape and size. Zrazy look like large elongated cutlets, and cartopeans are small, round, literally two bites.

Ingredients:
- Potatoes - 4-5 pcs.
- Prunes - 100-150 g
- Flour - 100 g
- Salt - a pinch
- Vegetable oil - for frying
- Ground black pepper - a pinch
- Eggs - 1 pc.
Step by step cooking potato zraz with prunes, recipe with photo:
1. Peel and wash potatoes. If there are black eyes, cut them out.
2. Cut the potatoes into cubes and place in the cooking pot.
3. Salt, cover with water and cook on the stove. After boiling, reduce the temperature and cook, covered, for about 20 minutes, until tender.
4. Drain the finished potatoes and transfer to a mixing bowl.
5. Cool potatoes slightly and add eggs. Season with ground black pepper.
6. Purée the potatoes with a pusher until smooth, so that there is not a single lump.
7. Pour flour into the potato mass and stir. The dough should not be too sticky.
8. Moisten your hands in water so that the dough does not stick to them and form round cakes. Place them on the countertop with some flour. Place whole prunes in the middle of the flatbread. Although you can finely chop it if you wish. Wash the dried plum and pat it dry with a paper towel. If a bone is present in it, then remove it first.
9. Lift the edges of the cake and cover the prunes so that they are inside.
10. Take the patty in your hands and twist it to smooth the seam.
11. Pour vegetable oil into a frying pan and heat. Spread zrazy and grill over medium heat for about 5 minutes until golden brown.
12. Turn them over and cook for the same amount of time until golden brown.
13. Serve potato zrazy with prunes with sour cream or garlic sauce.
