- Frozen corn - 100 g
- Salt - 2/3 tsp or to taste
- Frozen sweet bell pepper - 1 pc.
- Ground black pepper - a pinch
- Eggs - 1 pc.
- Frozen asparagus - 150 g
- Vegetable oil - for frying
Step by step preparation of a Mexican mixture of frozen vegetables with eggs, a recipe with a photo:
1. Pour vegetable oil into a frying pan and heat well. Then add the frozen bell peppers.
2. Next add the frozen asparagus beans.
3. Put frozen corn kernels. Add any other frozen vegetables available if desired. Put vegetables in the pan without first defrosting, because they will thaw in the pan.
4. When the vegetables are tender, season them with salt and black pepper and add a raw egg.
5. Stir the food quickly so that the eggs coagulate and coat the vegetables. Then remove the pan from the heat and start tasting the Mexican mixture of frozen vegetables and eggs. Such a vegetable mix can be used on its own as a light dinner or supplemented for lunch with meat, cereals or any other side dish.
