Carrot pancakes on kefir are not quite ordinary pancakes. But this is another great morning meal option for the whole family. They are prepared just as quickly and easily as other vegetable pancakes. It is worth saying that such pancakes are enjoyed with pleasure even by those who do not really like to use carrots on their own. Because their taste is no less attractive than their "brethren". Their bright sunny color is charged with a positive mood for the whole day ahead. Moreover, such a dish is an irreplaceable source of health at any time of the year. Beta-carotene, which is found in carrots, is an active aid in the fight against colds.
You can cook a dish from raw grated carrots, sautéed in oil and chopped in mashed potatoes, dried shavings, etc. Today I chose the last option and made pancakes with dried carrots. In addition, these pancakes can be prepared in two more ways. The first, where carrot shavings dominate, and the second, carrots are a flavoring addition to the dough. The amount of carrots and their ratio with flour depends on this. I decided to cook the most carrot dish, so there is very little flour here. But if you wish, you can adjust this dish to your taste.

Ingredients:
- Dried carrot shavings - 1 tbsp.
- Vegetable oil - 3 tablespoons
- Kefir - 1 tbsp.
- Flour - 50 g
- Eggs - 1 pc.
- Sugar - 2 tablespoons
- Baking soda - 1 tsp
Cooking carrot pancakes on kefir from dried shavings:
1. Pour the dried carrots into a bowl in which you will knead the dough.
2. Pour it with kefir at room temperature, because the recipe contains soda, and it reacts only with warm, not cold foods.
3. Stir well so that all the chips are covered with the fermented milk product.
4. Leave the carrots for 15 minutes to swell, expand and soften.
5. Then add the egg and vegetable oil to the dough. The egg should be warm for the same reason. Therefore, remove it from the refrigerator in advance.
6. Next, add sugar to the dough or replace it with your favorite jam.
7. Add flour mixed with baking soda to the dough. You can put more flour, but then you will have to add a little more kefir.
8. Knead the dough. Its consistency will be a little tight, like thick sour cream.
9. Put the pan on the stove, add vegetable oil and heat well. After a tablespoon, spread out a portion of the dough, forming an oval pancake. If you wish, you can put the pancakes on a paper napkin so that it takes up all the fat as much as possible.
10. Simmer the pancakes on one side for about 2 minutes and turn them over, where they cook for the same amount of time until golden brown. Serve them to the table immediately after preparation with sour cream or a cup of tea.
