Carrot pancakes are one of the healthiest foods around. They are perfect for those children who refuse to eat this vegetable on its own. In addition, they can be made by adding zucchini, cottage cheese, beets, apples, etc. But this time I decided to put oatmeal and sunflower seeds. The pancakes turned out to be quite satisfying, while low-calorie, and, of course, tasty. But each housewife, at will, can put completely different products: flour or semolina, fermented baked milk or milk, etc.

In addition, for the elderly, who do not have the opportunity to gnaw raw carrots, due to the condition of their teeth, then such pancakes will be an excellent dish. To make the carrot pancakes tasty, of course, first of all it depends on the fruits themselves. The carrots should be juicy and sweet, and the shape should be smooth and even. It is best if it is a young vegetable, but delicious pancakes are also made from old fruits. If the carrot is cracked and stained, it means that its core is damaged and the fruit is not juicy. Ingredients:
- Carrots - 3 pcs. (medium size)
- Oat flakes - 50 g
- Bran - 50 g
- Sunflower seeds - 2 tablespoons
- Dried or fresh orange peel - 1 tsp
- Sugar - 2 tablespoons or to taste
- Salt - a pinch
- Yogurt or kefir - 100 ml
- Eggs - 2 pcs.
- Refined vegetable oil - for frying
Cooking carrot pancakes
1. Peel the carrots, rinse, dry with a cotton towel and grate. A food processor can be used for this process.
2. Add oatmeal, sunflower seeds, bran, sugar, a pinch of salt and orange peel to the carrots.
3. Separate the yolks from the whites and add them to the dough, which is kneaded. And put the squirrels in the refrigerator.
4. Pour yogurt or kefir into the dough.
5. Stir the food again and let it sit for 30 minutes to allow the oatmeal to swell a little.
6. After this time, beat the whites until firm, tight foam and place them in the dough.
7. Stir the food with a few strokes so that the proteins do not settle, but remain fluffy.
8. Heat a frying pan with vegetable oil and spread the pancakes with a tablespoon, giving them an oval shape.
9. Cook them for about 2 minutes on one side until golden brown. Then flip over and cook for the same amount of time.
10. Serve ready-made pancakes warm with fresh tea or coffee. They are also delicious with sour cream, honey, ice cream or cream.
