Ingredients:
- Pork kidneys - 2 pcs.
- Garlic - 1 clove
- Salt - 0.5 tsp or to taste
- Ground black pepper - a pinch
- Ginger powder - 0.5 tsp (or fresh ginger root - 1 cm)
- Onions - 1 pc.
- Bay leaf - 2 pcs.
- Sour cream - 3-5 tablespoons
- Allspice peas - 3 pcs.
Step-by-step cooking of stewed pork kidneys in sour cream-ginger sauce, recipe with photo:
1. Wash the pork kidneys, cover with water and leave to soak for 6-7 hours, and preferably overnight. At the same time, change the water to fresh water 2-4 times.
2. Wash the soaked kidneys, cut in half and remove a small piece of fat.
3. Place them in a saucepan, cover with water and place on the stove to cook.
4. Bring the kidneys to a boil and simmer over medium heat for 15 minutes.
5. Drain the water, wash the kidneys from the pan and fill the offal with fresh water. Boil again, boil for half an hour and change the water. Repeat this procedure 2-3 more times. Season the kidneys one last time with salt and cook until tender. Pierce them with a fork or knife, the offal should be soft.
6. Cool the kidneys so as not to burn themselves and cut them into strips.
