Ingredients:
- Liver (any variety) - 250 g (beef is used in the recipe)
- Salt - 1 tsp or to taste
- Asparagus beans - 250 g (any sprouts: white, green, pinkish-green, purple)
- Ground black pepper - a pinch
- Carrots - 1 pc.
- Allspice peas - 3 pcs.
- Bay leaf - 2 pcs.
Step by step preparation of dietary liver soup with asparagus, recipe with photo:
1. Wash the liver under running water, remove the film and cut out the vessels. Cut it into medium sized pieces and place in the cooking pot. If you feel bitterness in the liver, soak it sliced in milk for half an hour, or at least in water. Then rinse with cold running water.
2. Fill the liver with cold drinking water.
3. Boil the liver and remove the formed foam from the surface. Reduce the heat to the minimum setting and cook the offal for 30 minutes.
4. Peel the carrots, wash, cut into medium-sized pieces and send to the saucepan. Boil and cook for 10 minutes. The soup may contain other vegetables to taste, but they should be neutral in taste so as not to overpower the taste of the asparagus.
5. Wash the asparagus, cut off the ends on both sides and cut into 2-3 pieces, depending on the size. Send the sprouts to the pot.
6. Season the dish with salt and black pepper, add bay leaves and allspice peas. You can also season the soup with thyme and any herbs: parsley, dill, basil …
7. Boil dietary liver soup with asparagus and cook until the asparagus is cooked, which is not more than 5 minutes. Serve the finished first course with croutons or croutons.
