Today is just such a day for me, so I decided to bake an open unsweetened puff pastry pie with sausage and cheese in a hurry. Although such wonderful pastries can be made with any other filling the chef tastes. It can be onions, minced meat, chicken, cottage cheese, mushrooms, vegetables, etc.
Thanks to the use of delicate puff pastry, the homemade cake bakes quickly. It turns out not only with a delicious filling, but also with a delicate and crunchy base that melts in your mouth. The outlines of everyone's favorite pizza are slightly noticeable in the product. The baking technology is very simple and no special skill is required. Ingredients:
- Puff pastry - 450 g
- Cheese - 150 g
- Tomatoes - 1 pc.
- Ketchup - 3-4 tablespoons
- Sausage - 300 g
- Garlic - 2 cloves
- Greens - 2-3 branches
- Onions - 1 pc.
- Mustard - 1 tsp
Step by step preparation of open puff pastry pie with sausage and cheese:
1. Peel, wash and cut onions into thin quarter rings.
2. To remove bitterness from the onion, scald it with boiling water. If you wish, then you can marinate it in vinegar for 5 minutes.
3. Peel the sausage and cut into rings 3-5 mm thick. Take the type of sausage to your taste: dairy, smoked, dry-cured, etc. I use two types of sausages.
Grate the cheese or buy ready-made cheese shavings from the store.
4. Wash the tomatoes, dry with a towel and cut into thin quarters into rings. Finely chop the peeled garlic cloves and washed greens. I always use cilantro or parsley for herbs.
5. Remove the frozen puff pastry leaves from the freezer in advance and leave to defrost at room temperature. This will take you about 20-30 minutes. Do not use the microwave to defrost.
When the dough is soft, sprinkle flour on both sides and roll out into a thin rectangular layer.

6. Grease a baking tray with a thin layer of vegetable oil. Although if the puff pastry is of good quality, then it should not stick to the baking sheet, because it contains a lot of fat. But I always play it safe and put a little fat on the baking sheet. You can also spread foil or baking paper on a baking sheet to make it easier to clean the dishes later.
7. Transfer a sheet of dough to a baking sheet and apply ketchup and mustard to it.
8. Spoon them all over the dough and sprinkle with chopped garlic.
9. Top with onions and herbs.
10. Place the sausage with tomatoes.
11. Sprinkle everything with cheese shavings and send an open puff pastry pie with sausage and cheese to bake in a preheated oven to 200 degrees. After 20 minutes, when the edges of the dough are browned, the open layer cake is ready. It has a crunchy base with many layers. And delicious, hearty filling.
