Soubise or, in a simple way, onion sauce is loved in many countries of the world not only for its impeccable taste, but also for its beneficial properties.
Composition and calorie content of subiz sauce
Despite the fact that butter is used in the sauce recipe, due to the addition of a large amount of onion, its calorie content is quite moderate, so it is sometimes allowed to indulge in a French delicacy even with a dietary diet.

How to make subiz sauce?
As we said, the subiz sauce is prepared in two stages: first you need to prepare the béchamel, and then add a number of additional ingredients.
Prepare bechamel:
- Peel the onion (1 pc.), Cut into half rings.
- Put a saucepan with a thick bottom over low heat, pour milk (700 ml), put prepared onion and bay leaf (1 pc.), Bring to a boil, turn off the heat immediately, cover the pan with a lid and leave for 10 minutes.
- Melt butter (4 tablespoons) in a frying pan, gradually add flour (80 grams), do not forget to stir.
- Fry the butter and flour for a couple of minutes, then slowly pour in the prepared milk and onions, bring the mixture to a boil.
- Add salt and pepper to taste, reduce heat to low and cook for 20 minutes, stirring constantly, then strain the béchamel through a sieve.
Now that the base is ready, you can start making the subiz sauce:
- Finely chop the onion (1 cup), pour boiling water over it, cover and leave for 5 minutes, then drain.
- Melt the butter (3 tablespoons) in a saucepan, add the prepared onion to it and simmer until soft on a small flame.
- Now pour the béchamel (1 glass) into a saucepan and cook for another 15 minutes.
- Finally, add the cream (1 cup), salt if necessary, and turn off the heat after a couple of minutes.

- Chicken breast with subiz sauce … Cut chicken breast (500 grams) into portions, place in a bowl. Sprinkle with salt, pepper, dried garlic and Italian herbs to taste. Add olive oil (70 ml), soak for 20-30 minutes at room temperature. Transfer the fillet to a baking dish, cover with foil, bake for 20 minutes at 180 degrees. Remove the foil and leave the meat in the oven for another 10-15 minutes to cover with a delicious crust. Serve the cooked dish with rice, cherry tomatoes and subiz sauce.
- Beef sausages … Cut the beef (500 grams) into small pieces, scroll through a meat grinder. Add salt and pepper to the minced meat to taste, mix thoroughly and roll small sausages with a diameter of 2-3 centimeters and 5-6 centimeters in length. You should get 25-30 sausages.
